Brownies - take 2

Take two on the brownie recipe, in search of that sweet spot between dense cake and chewy num nums. Made the below modifications, except using 5 eggs... A little too cakey but a definite improvement over the gritty granulated sugar feel of the previous recipe. Dropping the temp also helped ensure and even bake...

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup melted butter
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 1 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 325 degrees F. Grease a 9x13 inch baking pan.
  2. In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Spread the batter evenly into the prepared pan.
  3. Bake for 35 minutes.
